Chinese Braised Chestnut Chicken recipe
Ingredients:
6 dried black mushrooms.
30 chestnuts.
2 lbs of chicken legs.
3 sets of chicken giblets
2 slices of fresh ginger root.
3 tablespoons of cooking oil.
2 cups of water.
3 tablespoons of soy sauce.
2 tablespoons of Sherry.
½ teaspoon of salt.
Directions:
Soak the dried mushrooms.
Shell the chestnuts, then slice in half.
Using a cleaver, chop the chicken legs, bones and all, into 2-inch sections. Similarly, chop giblets into 2-inch sections.
Slice the ginger root and soaked mushrooms.
In a heavy pan, heat the oil. Quickly brown chicken and giblet sections.
Add the ginger root and mushrooms; stir-fry for about 1 minute.
Meanwhile, heat, but do not boil, the water; then stir in the soy sauce, Sherry and salt.
Pour this mixture over the chicken and bring to a boil. Simmer, covered, for 30-35 minutes.
Add the chestnuts and simmer, covered, 15 minutes more.
